Serves 2 : Total Cost £2.73 excluding rice and vegetables
Ingredients:
- 2 Tesco duck legs
- 2-3 tablespoons Tesco clear honey
- 1 small onion
- 2 small or 1 large garlic clove
- Tesco powdered ginger (about 2/3 tablespoon)
- 1 cube chicken stock, diluted
- Finely dice the onion and mince the garlic cloves. Fry these in a little oil with the garlic powder. When the onion is soft, add the honey and the chicken stock. Mix well and simmer gently for a few minutes.
- Place the duck legs in a casserole dish.
- Pour the sauce over the legs. Cover and place in the oven at gas mark 2-3.
- After 2 1/2 -3 hours remove the casserole dish from the oven. Transfer the liquid and onions to a pan and simmer on a high heat until the sauce is thick.
- Pat the duck skin dry. Score the skins on the duck legs in a criss-cross pattern. This helps the fat to run off and makes the skin go crispy. Sprinkle them with a little salt and pan fry them skin side down until the skin is crisp.
- Serve the duck legs with mashed potato and a green vegetable or replace the mash with rice for the budget version
