Ingredients: Enough for 2
- A pack of two pork spare rib chops (approx. 425g-475g)
- A little vegetable or sunflower oil for frying
- 1 medium onion, finely diced
- 1 large garlic clove (or 2 small), crushed
- 500ml Coca-Cola (not diet- this needs to be full fat to work!)
- 1 tablespoon smoked paprika. You can use normal paprika but then you will miss out on the great smoky flavour.
- A generous shake of Worcestershire sauce (about two tablespoons).
- ½ tablespoon honey
- ¾ tablespoon tomato puree
- 1 ½ tablespoons Dijon mustard
- 2 heaped teaspoons of cayenne pepper
- Rice/mashed potato to serve plus a salad or vegetables.
Method
- Preheat the oven to gas mark 3 (160C)
- Sweat the onions and the garlic together on a low heat for about five minutes (until the onon is softening slightly.
- Add everything else except the spare ribs. Mix well and simmer until the liquid volume has reduced by a third.
- Find a small casserole dish and place the ribs in it. Cover with the sauce and cook, covered on gas mark 3 (160C) for 1 hr and 15 minutes.
- Remove the ribs from the oven and pour the sauce off into a saucepan.
- Simmer the sauce until it is thick and concentrated - add flour to thicken at the end if necessary.
- Serve the rib on a bed of herby creamy mash with the sauce poured over and a green vegetable.
