 For the spare rib 

  • 1 spare rib joint (approx 200g meat)
  • 200ml hoisin sauce (for example Sharwoods
  • 1 tbsp dark soy sauce
  • 1 tbsp five spice
  • 1/2 tbsp honey
  • 1/2 small clove garlic, crushed,
  • 1 tsp hot chilli powder or chilli flakes
  • 1 tbsp Cornflour paste
  1. Find a oven proof dish just big enough to hold the spare rib steak.
  2. Combine the other ingredients.
  3. Place the spare rib in the dish and pour the sauce over the meat.
  4. Cook in a preheated  oven at gas mark 3 for 1 hr 30 - 1hr 40 minutes.

For the rice

  • 1 portion (2 handfuls) basmati rice
  • 2 spring onions, chopped,
  • 2 cubic inches root ginger, crushed
  • 1 tbsp ginger powder,  
  • pinch turmeric (optional),
  • a little sesame oil.
  1. Rinse the dry basmati rice with the crushed ginger and ginger powder.
  2. Cover with boiling water and boil until rice is cooked.
  3. Drain and mix in some sesame oil to prevent the rice from sticking.
  4. Mix in the spring onions.
  5. Stir in the turneric powder, if using, to give the rice a yellow colour. Make sure the turmeric is mixed in thoroughly.

Serve the rice topped with the spare rib and the sauce accompanied  by a vegetable stir fry.
