Ingredients

  •  200g white fish (I used sword fish but any fish with a strong flavour will do, eg seer fish, king fish)
  • ½ medium onion, sliced
  • 1 clove garlic, minced
  • 1 cubic inch ginger, minced
  • 1 ½ tablespoons sri lankan roasted curry powder
  • tamarind ( I used 1/3 tsp very concentrated paste)
  • ½ stalk lemongrass, bruised
  • 1/2 tbsp turmeric
  • 2 green chillies, chopped (if you like it hot, otherwise 1)
  • Method 

    1) Cut the fish into large cubes and set aside.

    2) Fry the onions, garlic, ginger and chillies together until the onions are golden brown .

    3) Add the tamarind, lemongrass, curry powder and turmeric with about 150 mls water and bring to the boil.

    4) When the sauce is beginning to thicken,  sear the fish cubes  and add to the simmering mixture. Continue to simmer until the fish is cooked and the sauce is thick.
