Note to students -the ingredients apart from the fish cost about 50p. Find some smoked cod or haddock on special offer and make this!
200g smoked haddock
100ml milk, or enough to cover the haddock in a pan
½ medium onion, finely diced
2 handfuls basmati rice
50g butter
1 soft boiled egg, halved.
1 tbsp cream
1 tbsp curry powder
Method
- Poach the fish on a low heat until they are cooked.
- Meanwhile, fry the onion in the butter until soft.
- Add the rice and stir to coat with butter. Fry for 1 minute
- Add the poaching liquid from the fish to the rice. Bring the rice to a gentle simmer and stir continuously until the liquid is all absorbed.
- Test to see if the rice is cooked. If not, add a little more milk and continue to simmer. Repeat until the rice is cooked.
- Stir in the flaked haddock, parsley, cream and curry powder. Check for seasoning and add salt and pepper to taste.
- Serve topped with the boiled egg.
