Cost: Approx £1.20 per person or £1.50 by the time you add vegetables.

Makes enough for 4.

Ingredients

  • 1 brisket joint (850-900g),
  • 2 onions, sliced into rings
  • 1 can ale of your choice 
  • 4 or 5 garlic cloved, minced
  • 1 tablespoon mixed dried herbs
  • 500ml beef stock (1 -1 1/2 oxo cubes worth)
  • ground pepper
  • 1-2 tsp sugar

Method

  1. Find an oven dish deep enough so it will fir the brisket and you can cover it with liquid. 
  2. Preheat the oven to gas mark 2-3.
  3. Gently brown the onions and the garlic in a little oil in a wide saucepan.
  4. Sear the beef on all sides in the saucepan with the onions.
  5. Transfer the beef, onions and garlic to the oven dish. Season with lots of pepper.
  6. Pour over the ale and then add enough stock to cover the beef.
  7. Cover the dish and cook at gas mark 2-3 for about 4 hours.
  8. Remove the beef from the oven.
  9. Pour the braising liquid into a large saucepan.
  10. Gently simmer the liquid until you have a thick gravy.
  11. The beer may have made the gravy bitter, so add sugar to taste.
  12. Serve the carved beef with the gravy, roast potatoes and wintery vegetables.
