Ingredients
- 200g thin turkey steaks
- 1-2 slices white bread, crusts removed
- 1 tablespoon paprika
- 1 tablespoon dried mixed herbs
- 1 level tablespoon cayenne
- 1 tablespoon tomato puree
- 1 crushed clove of garlic
- 1 small egg, beaten
Method
- Cut the bread into small pieces and blitz in a blender until you have fine breadcrumbs.
- In a frying pan, dry fry the breadcrumbs gently until they are light brown and crispy.
- Mix the breadcrumbs with the herbs, cayenne and paprika and set aside.
- Rub a little of the tomato paste all over the turkey steaks. Do the same with the crushed garlic. Then dip each piece of turkey in the beaten egg and roll in the breadcrumb mixture.
- Fry the turkey for about 1 minute per side on a medium heat until cooked through and the breadcrumbs are golden brown.
- Serve with cous-cous and mediterranean vegetables.
