Ingredients (Enough for two with a salad accompaniment)
- 3 links (approx 200g) Brindisa dolce chorizo or other similar chorizo, chopped into small pieces.
- half a large onion, finely diced
- 1 large clove garlic, crushed
- 100g taleggio cut into small pieces
- 60g marscapone
- 10 leaves rosemary, minced
- Grated cheddar to top
Method
- Preheat oven to gas mark 6.
- Cook the pasta according to the packet instructions.
- Meanwhile sautee the onion, rosemary and garlic on a low heat in olive oil.
- Add the chorizo pieces and fry until cooked.
- When the pasta is cooked, drain and add the taleggio and marscapone. Stir through until the cheese has melted and coats all the pasta.
- Add the chorizo and onion mixture and mix into the pasta.
- Transfer to an oven proof dish, top with cheese and place in the oven.
- When the cheese on top is bubbling, (10 minutes or so) remove from the oven.
- Serve with a side salad.
