Quantities are for one 200g steak 

For the Buffalo marinade

  • Chopped rosemay leaves,
  • thyme leaves,
  • 1 clove garlic, crushed,
  • enough beer to cover,
  • a dash worcestershire sauce,
  • 1 tbsp mustard

Combine ingredients and soak the steaks for at least 6 hours or overnight.

For the Sauce

  • ½ small/medium onion, sliced into rings
  • 2 large button mushrooms, sliced
  • rosemary leaves
  • thyme leaves, 1 sprig
  • 1 clove minced garlic
  • ½ bottle of a flavoursome, cinnamon-y beer (eg Bah Humbug)
  • ½ cup Beef or Lamb Stock
  • Dash of Worcestershire Sauce
  • 2 tsp sugar
  • Cornstarch to thicken.

Fry the onion, garlic and herbs in vegetable oil until the onion starts to brown. Add the mushrooms and fry until cooked. Pour on the beer and stock and leave to simmer on a low heat for about 10 minutes. Taste and add at least 1/2 tbsp sugar and a 1/2 tbsp worcestire sauce. Add the cornflour paste to thicken.

For the steak

  • 200g buffalo or sirloin steak
  • Ground Black pepper

Season the steak on both sides with ground black pepper and fry on a high heat for 1-2 minutes on each side, depending on thickness. Serve with roast potatos and a green vegetable with the sauce poured over.
