Ingredients
For The Marinade
- Lemon infused olive oil to cover
- squeeze of lemon
- dash of soy sauce
- clove of garlic, crushed
- 1 cubic inch ginger, crushed
Also
- 1 tuna steak
- 25g sesame seeds
For the noodles
- 1 portion fine noodles, part cooked
- 1/2 can coconut milk
- 3 large dried lime leaves
- dash fish sauce (nam pla)
- 1 red bird’s eye chilli, chopped
- small handful coriander leaves, roughly chopped
- 1 clove garlic, crushed
- 1 cubic inch ginger, crushed
- 1 lemongrass stalk, chopped and bruised
- Squeeze of lemon and lime
Method
- Combine the marinade ingredients in a dish large enough to hold the tuna steak. Mix well. Marinate the tuna in the mixture for 2-6 hours.
- Put the coconut milk in a pan with the lime leaves and simmer gently.
- Add the crushed garlic and ginger, chillies, fish sauce, and lemon grass and half the coriander. Simmer for about 5-10 minutes until the dressing starts to thicken.
- Add a squeeze of lemon and lime and the rest of the coriander.
- Toss the noodles in the dressing.
- Coat the marinated tuna with the sesame seeds and fry on a high heat for 30s to 2 mins on each side, depending on the thickness of the steak.
- Serve with some steamed pak choi.
