Ingredients: Enough for 1 as a side dish
- 2 small white potatoes, peeled and cut into half inch cubes
- 3 stems, coriander, roughly chopped
- 1 tsp mustard seed
- 1 tsp whole cumin
- 1/2 tsp turmeric.
- 3 small curry leaves, torn in half
Method
- Fry the mustard and cumin in vegetable oil on a low heat until the mustard is just starting to colour.
- Add the potato, turmeric and leaves. Turn up the heat to medium and fry until the potato is cooked though ( 5 mins)
- When the potatoes are cooked and golden brown add the coriander and stir in. Leave tot cook for a minute and serve.
