Spare Rib with Cola sauce 

Ingredients: Enough for 2

    • A pack of two pork spare rib chops (approx. 425g-475g)
    • A little vegetable or sunflower oil for frying
    • 1 medium onion, finely diced
    • 1 large garlic clove (or 2 small), crushed
    • 500ml Coca-Cola (not diet- this needs to be full fat to work!)
    • 1 tablespoon smoked paprika. You can use normal paprika but then you will miss out on the great smoky flavour.
    • A generous shake of Worcestershire sauce (about two tablespoons).
    • ½ tablespoon honey
    • ¾ tablespoon tomato puree
    • 1 ½ tablespoons Dijon mustard
    • 2 heaped teaspoons of cayenne pepper
    • Rice/mashed potato to serve plus a salad or vegetables.

Method

  1. Preheat the oven to gas mark 3 (160C)
  2. Sweat the onions and the garlic together on a low heat for about five minutes (until the onon is softening slightly.
  3. Add everything else except the spare ribs. Mix well and simmer until the liquid volume has reduced by a third.
  4. Find a small casserole dish  and place the ribs in it. Cover with the sauce and cook, covered on gas mark 3 (160C) for 1 hr and 15 minutes.
  5. Remove the ribs from the oven and pour the sauce off into a saucepan.
  6. Simmer the sauce until it is thick and concentrated - add flour to thicken at the end if necessary.
  7. Serve the rib on a bed of herby creamy mash with the sauce poured over and a green vegetable.
